Warm Winter Stew

This is my favourite stew recipe. It comes from a Finnish cookbook that I bought when I first was married. I think it means hunter's stew. Anyway it's very good to make in a slow-cooker while you spend the afternoon doing something else -- like sewing. This is a great one-pot meal that has very little, if any, gravy, and makes four good-size servings. Sometimes I add chunks of squash as well; they mush quite nicely and give the stew a bit more moisture and taste.

2 lbs round steak, cut in 2-3 inch cubes
4 potatoes, peeled and sliced
4 carrots, peeled and sliced
2 onions, peeled and sliced
salt and pepper butter (about 2 tbsp)

Peel and slice the potatoes, onions and carrots. In a stove top casserole dish (or slow cooker), layer the meat chunks on the bottom of the pot. Top with a layer of potatoes, a layer of carrots, a layer of onions, sprinkling each layer with some of the salt and pepper. Dot the whole thing with a bit of butter. Cover it and cook over very low heat for 4 hours or until it's done.
