I don't know where the name for this came from, it's a lot like scalloped potatoes but much lower in calories and without the cream sauce and cheese. Delicious! This makes 4 servings.
2 lbs potatoes, sliced thin
2 medium onions, sliced thin
1 1/2 tsp salt
2 tsp parsley, chopped
pepper
1 cup beef stock*
2 tsp sugar
Peel and slice vegetables thinly. Arrange in shallow glass oven dish, ½ inch layer thick. Salt well, add pepper, parsley, butter and stock to the level of the top of potatoes. Bake for 1 hr at 400° until liquid is absorbed.
*1 cup of stock, I used canned or packaged low-fat and low-salt broth
