A little side dish ...
2 lb carrots
1 tbsp salad oil
1/4 tsp chopped garlic
salt and pepper to taste
1 tbsp butter
Pare carrots. Grate medium, into a large skillet. Toss with oil, seasonings and 3 tbsp water. Cover tightly, cook over medium heat 10-12 minutes, stirring occasionally. Remove from heat and toss with butter. Serves 4.
